Pineapple Upside Down Cake

1 pkg. yellow cake mix, prepare as directed
1 can drained pineapple rings
Enough Maraschino cherries halved
2/3 cup melted butter
3/4 cup brown sugar

Put the melted butter and brown sugar in the bottom of a 9 x 13 pan that has been prepared for baking. Place pineapple rings n baking dish and add enough cherries to fill each pineapple ring. Pour cake batter over the fruit and bake as directed.

If you prefer to make your cake from scratch follow these directions:
1 cup flour
1 tsp. baking powder
1/2 tsp. salt
 2eggs
2/3 cup sugar
1/4 milk

Combine items above and pour over pineapple rings and cherries. Bake at 350 degrees until done and top is evenly golden/ The cake should spring back when you touch it.


Serve with ice cream if desired.

This is the recipe I use when I make it for Hubs....I use the cake mix and it is wonderful.

If it doesn't have chocolate in it I don't consider it a dessert so I could eat this whole thing and still have dessert! My hubby loved Pineapple Upside Down Cake so I'll have to give your recipe a try. Thanks for sharing and thanks for stopping by my blog ;).

Thanks for stopping by and leaving me a comment! I appreciate it! The cake looks yummy! I was reading your comment below about your Mom and I lost my Mom when I was 15 and I love to cook things that she cooked and I have a ton of her recipes and cookbooks that fill up the top of my cabinets!

This is my sister-in-law's favorite cake! I haven't made it in awhile..it is so good!

I really loved the Denver Art Museum...you are lucky to live near it and that wonderful library!

Anne, my mom made the best upside down cake, maybe I can borrow her cast iron skillet and give it a try..YUM!
