I had a nice response from my Alpabeha Thursday/Summer School Rainbow post for the color green so I decided I would post a few here. You asked about the hubby's green chili recipe so you will see it here. The thing about his green chili recipe is sometime he likes it filled with chunks of tender, tasty pork and other times he goes meatless.
So let me share my personal favorite bell pepper recipe from my sweet mom's recipe collection.
6 green bell peppers
1 lb. lean ground beef
1/2 cup long grain rice
1 can tomato soup (15 oz.)
1 tsp. cinnamon (preferably Watkins)
Salt and pepper to taste.
Wash and seed the peppers. Place them in a large stock pot of boiling water for about 5-7 minutes. Drain well and cook the meat in large skillet. Cook your rice according to package directions. Drain the meat and mix well with rice and cinnamon and salt and pepper. Add some tomato soup to thickening the filling. Stuff each pepper and place close together in large crock pot. Pour remaining soup mix with a little water over the peppers and cook on low heat for at least 8 hours. They are delicious and you can serve them with other sides of your liking. My youngest son does not like the cinnamon and I often prepare the recipe without the cinnamon for him in a separate batch. The Watkins cinnamon is the very best I have ever had. You can pour a sprinkle in your hand and eat the cinnamon plain, it doe snot have a bitter taste like most! You can order Watkins on line or find a rep. in your area. It is more expensive but I feel it is worth the extra cost. Just makes everything taste better!
Here is our phamily green chili recipe:
We freeze our chilies each year so we use a quart size bag full of spicy chilies. He blends those in the blender with a large can of whole tomatoes (32 oz.) and two or three tomatillos. Add one tablespoon of minced garlic and one tablespoon of salt. Add tablespoon chicken bouillion (or fresh chick stock) and 1/2 to 1 cup flour mixed with a cup of water. He dumps it all into his favorite 8 qt. Princess House stockpot and stirs it constantly until it boils. He then lets it simmer for 1 hour. You may add the chunks of pork too. He often cuts up pork into bite size chunks and rolls those in some flour before adding to the pot. He likes Pueblo chilies or Dynamite chilies.. You may add a Big Jim or a few Anaheim's to give extra flavor. The Pueblo and Dynamite are hot so the Big Jim's and Anaheim's just add mellow flavors. We often double the batch so we can make a few dozen burritos for the workweek. We like chorizo sausage with potatoes cubed and cheese and chili or beef and bean or even just bean and cheese. We like to mix up the batch so we have some variety. If you want some spice but can't take much heat you can always add a can of R-o-tel spicy tomatoes. They come in a variety of mild,medium and hot flavors.
Chilies are hit and miss and you have to gauge that first batch so you will know just what temperature those chilies are. You can never get a certain medium flavor. There is an art to it and you have to play with those chilies to get the perfect taste for you.

GREEN CHILI IS GREEN IN MY RAINBOW
I can feel autumn in the air. Sooner than later the air will become cool and crisp and fall will be in full swing. I hope you will all stop by the teacher's place and link your post for Green is the Color in this weeks Summer School rainbow! I think green is for green chili! We go to our hometown of Pueblo and we buy a bushel or two of green chilies already roasted. Then we go home and peel and bag them and toss them int he freezer. All winter long we have lots of delicious green chili. When I was a kid my mother would take a handful of mild green chilies and tossed them in a pan with a little oil and garlic salt. Then we would eat those chilies on a thick slab of fresh homemade bread! It was a wonderful meal and I always love it.
My hubby likes to make green chili but he never thinks it is good enough. I have a friend, Sharon, who will buy a pork roast and give it to him. He will cook that roast and shred the meat and make her a big batch of green chili. We like to eat green chili over rice or mashed potatoes. We make burritos and we eat it with my mom's famous chicken and rice dish! Green chili is so wonderful and healthful. It is chock full of good stuff likes vitamins and capsaicin which is a natural analgesic that is safe and effective in treating symptoms of arthiritis, herpes zoster-related pain, diabetic neuropathy, postmastectomy pain and headaches. Capsaicin extracted from chilies is used in a spray as a less-lethal weapon in plant spraying. Several years ago a medical was done showing that Hispanic women have a lower incident of breast cancer and it was attributed to their diet. When our last child was born the anesthesiologist said to us "People spends thousands of dollars trying to have children and I understand you eat green chilies! " It is true, it worked as a wonderful fertility drug! Smile!
Once I get my camera back from my sons Vegas vacation I will take pictures of the hubby cooking with green chili! So until then here are some chili photos to show you. Before I sign off please visit Betty here and check out her Green Beret post. It is beautiful.

ROSE THE RED NECK

Tonight I want you to get to know Rose. She is the kitty cat that belongs to my youngest son. When he brought Rose home 5 years ago she had been born on March 16, 2005. Our son claimed his friends parents were divorcing and all the kittens would be drowned if someone did not take them. So we were suckered into adopting Rose. Don't let her fool you. She appears to be sweet and cute but she is wicked! She terrorizes all three dogs. Smokey is particularly afraid of her! She has a love for fried chicken. Popeye's fried chicken exactly! One night when the hubby was working late and the kids were doing their thing with their friends I brought home a two piece Popeye's spicy fried chicken dinner. It had a huge breast and wing and a biscuit along with a side of mashed potatoes and gravy! I set my bag that was tied with a knot on the counter. Inside the bag was a box with a little flap to secure it shut! I ran to wash my hands and when I returned a minute later my box was lying on the floor totally empty! Rose smelled like fried chicken and I know it was her. She is a skittish funny little kitty. She bite the vet;s assistant when they tried to give her her shots! She is terribly bossy and she likes to rule the roost! She loves to torment ole Boots. She likes to groom him but when he has had enough he will flip her off his back like a toy! She will go flying through the air like a trapeze artist! But Rose is cold blooded and she likes to snuggle in the winter time. She also likes to lay in bed with us early in the morning. So here are a few photos of Rose.
Rose is snuggling in the third photo on my brand new 650 thread count Egyptian Cotton sheets that I got from CSN when I won the giveaway at Barb's. I just took them out of the dryer and she snuggled into them before ewe could make the bed! In the second photo she is posing for the camera and in the first photo she was just a tiny kitten.

HIS EVERLASTING ARMS
Good morning and many blessings to you and yours. I want to try to make my post short and simple today. But my message is powerful because it is all about those everlasting arms that will hold you and cradle you and care for you when you are down and out and at your very worst. Please visit our lovely hosts Charlotte and Ginger. These gals do an exceptional job keeping us all in the posting loop. I learn so much and get to know so many beautiful people through this weekly post. I even get to visit my Pink Saturday and other posting friends here. So go here so you may thank them.
